The Not Company (NotCo) is a food-tech company developing machine learning technology to craft delicious foods faster, better and more accurately than other R&D powerhouses. Food and data scientists came together to develop a unique and proprietary algorithm that sorts through consumer preferences (taste, nutrition, sustainability, mouthfeel, aftertaste, etc.) and allows them to formulate plant-based alternatives to milk, yogurt, dressings and desserts that taste, feel, look and behave the same as the real thing. Founded in 2016, NotCo aims to disrupt the factory-farm food system in Latin America by 2018 and in North America by 2019.
